Ageing takes time. And a professional fridge, coated with Himalayan salt that ionizes and purifies the meat, while it slowly dries up and rehydrates from the fat layers. This is the marvelling of marbling: the fat brings back the taste of the grass the animal was fed with.

And for a special treat, we age some of the cuts in whisky, for an incredible melt-in-the-mouth effect.
